Description

The Zero Branco American potato is a variety of yam (Ipomoea batatas) grown successfully in the Zero Branco area, thanks to the loose, well-drained soils typical of the Veneto plain. It is distinguished by its thin skin and deep orange flesh, rich in beta-carotene, with a sweet and delicate taste. This potato is highly appreciated both for fresh consumption and for gastronomic use: baked, fried, in creams or as an ingredient in desserts and gnocchi. Harvesting takes place between late summer and early fall, using manual methods that respect the plant. In recent years, attention to this tuber has increased because of its nutritional properties (it is gluten-free, rich in fiber and antioxidants) and its low environmental impact. Zero Branco’s American potato is now a niche but growing product, supported by small producers who are attentive to quality and the enhancement of the land.
