Description

The Montello potato is a variety grown in the hilly area of Montello, in the province of Treviso, on sandy, well-drained soils that ensure excellent tuber quality. It has a smooth skin and pale or yellow flesh, depending on the variety (more floury or firmer), and is prized for its delicate flavor, firm texture, and good cooking firmness. It is ideal for making dumplings, mashed potatoes, roasted potatoes and soups. Cultivation follows traditional techniques, often conducted by small local farms that value short supply chains and seasonality. The Montello potato is one of the stars of autumn festivals, where it is celebrated in rustic dishes that recall peasant cuisine. In recent years, it has been the subject of promotion projects related to sustainable agriculture and the enhancement of the territorial specificities of the Treviso hill country.
