Description

Casatella Trevigiana DOP is a fresh cheese typical of the province of Treviso, a symbol of the Veneto dairy tradition. This cheese is made from whole cow’s milk, following artisanal methods that respect ancient local recipes. It is mainly produced in the spring and summer period, when the milk has special characteristics due to the natural feeding of cows.
Casatella has a soft, white and moist paste with a delicate, slightly sweet and creamy flavor. The rind is thin and edible, with no mold. Thanks to its texture and light taste, it is very versatile in cooking: it can be enjoyed on its own, accompanied by honey, jams or cured meats, or used in traditional recipes such as risottos, savory pies and stuffed pastas.
