Sile white asparagus is a horticultural delicacy grown in the sandy and alluvial areas along the Sile River. Its main peculiarity is its snow-white color, due to the “in the dark” cultivation technique, which prevents photosynthesis and thus the formation of chlorophyll. This process gives the shoot a tender texture and a sweet flavor, free of bitter notes. It is harvested by hand from March to May and is the star of many spring recipes such as risottos, omelettes, velvety soups or simply boiled with hard-boiled eggs and vinaigrette. The Sile white asparagus is protected by local consortia that guarantee its traceability and quality. It represents an example of a refined and identifiable crop that is also popular in gourmet restaurants. Every year it is celebrated by festivals and fairs that attract enthusiasts and tourists, confirming its central role in Treviso’s agri-food industry.
