The Borso del Grappa pea is an early and tender variety grown in the foothills between Mount Grappa and the Treviso plain. It is a sweet pea with a thin skin and bright green color, which is harvested by hand between April and May. It is a niche crop, handed down by generations of farmers who guard its seeds and cultivation techniques. In cooking it is used in risottos, omelets, velvety soups or simply sautéed with baby onions. Its delicate flavor and creamy texture make it very popular in traditional spring dishes from the Veneto region. In recent years it has been at the center of projects to protect local vegetable varieties and an integral part of short supply chains that unite producers and conscious consumers.
