The action Cooperation for food systems, supply chains and local markets - Food communities and biodiversity communities of agricultural and food interest supports the aggregation, through a Cooperation Group, of stakeholders involved in carrying out activities aimed at establishing new “Food communities and biodiversity communities of agricultural and food interest”, as defined by Law 194/2015, or at supporting existing Food Communities.

SOPRESS.A.M. ICA - Characterisation and Promotion of Sopressa from the Alta Marca Trevigiana

Purpose

Pig farming has historically represented an essential element of the rural economy, giving rise to a well-established cured meat tradition, as documented by numerous historical and anthropological sources. Sopressa Trevigiana belongs to this context and is now listed among Veneto’s Traditional Agri-food Products (PAT). Sopressa from the Alta Marca, produced mainly by local small-scale producers (PPL) and artisan butcher shops, is a product with a strong identity, deeply linked to the local area, and contributes to the preservation of agri-food biodiversity, local development and tourism promotion.

Expected Results

The project aims to protect and promote this speciality through:
i) an initial characterisation of Sopressa from the Alta Marca, through an inventory of operators, analysis of production techniques and chemical-nutritional characterisation;
ii) the definition of shared guidelines to protect typicality and quality, supporting product recognition and consumer trust.
The activities, organised into work packages, include historical analyses, territorial surveys, farming and processing trials, short supply chain strategies and a multichannel communication plan.
