The dwarf borlotto bean of Levada is an indigenous variety grown in the hamlet of Levada, in the municipality of Ponte di Piave. It is a small, early-cycle legume with cream-colored pods streaked with red and round seeds. It has a particularly delicate taste and tender skin, making it ideal for preparing soups, soups, and summer salads. Grown on a small scale in family gardens and fields, it is a symbol of sustainable agriculture and local biodiversity. It is sown in spring and harvested between July and August. This bean has made a comeback thanks to interest in ancient varieties and the conservation work of local farmers and associations. Its rediscovery represents a success in the recovery of typical crops, and its use in cooking enhances poor but genuine dishes of the Veneto tradition.
