The foothill rustic chicken is a free-range or semi-free-range bird raised in the hilly areas of the Veneto region, particularly along the foothills of the Treviso area. Compared to intensively raised chickens, it grows more slowly and feeds on natural grains, grasses and small insects, following an unforced diet. The result is a firm, flavorful, richly flavored meat with good cooking performance. This chicken is ideal for roasting, baking with potatoes or stewing with herbs and white wine. It is a typical food of family Sundays and village festivals. Today it is the focus of enhancement projects that aim to promote local breeds and ethical and sustainable farming methods. Rustichello is an example of gastronomic quality linked to the territory, and represents the simplicity and authenticity of rural Veneto cuisine.
