The Mondragon goose is an indigenous variety associated with the municipality of Godega di Sant’Urbano and the surrounding areas of Treviso. It is an animal reared traditionally in the wild or semi-wild, in small family farms, where it feeds mainly on wild grasses, grains and country residues. This type of farming guarantees a high quality meat, darker than that of chicken, with a good fat component that gives it a strong and intense flavor. Goose is the star of many local recipes, including roast goose, boiled or stuffed goose, often served with chestnuts or seasonal vegetables. The fat is preserved and used for cooking, as a seasoning, or in the preparation of pâtés. The Mondragon goose is part of Veneto’s rural memory and is back on the tables today thanks to the rediscovery of ancient breeds and sustainable breeding.
