Description

Prosecco Col Fondo is the oldest and most authentic version of Conegliano Valdobbiadene Prosecco Superiore DOCG. It is a bottle-fermented sparkling wine, without disgorging: the yeasts remain at the bottom, hence the name. This traditional method, recovered in recent years, gives birth to a wine with a rustic and genuine character, very much linked to the peasant history of the Veneto hills.
Produced with hand-picked Glera grapes, Col Fondo is cloudy, with a straw-yellow color and a fine but less intense perlage than the Martinotti method. The nose offers notes of bread crust, apple, white flowers and citrus, with slightly evolved nuances. In the mouth, it is fresh, dry, and savory, with a slight final bitter note that makes it unique.
It should be served chilled and can be shaken or poured slowly, depending on whether you want to include or separate the natural background. Ideal with cured meats, fresh cheeses, rustic dishes and traditional cuisine.
