“Fasol del Lago” is an ancient variety of bean grown in the area of Lake Santa Croce and in some wetlands in the province of Treviso. Small in size, with an elongated shape and thin skin, it is distinguished by its great ability to absorb flavors during cooking, making it ideal for soups, pasta and beans or warm salads. Traditionally sown in May and harvested between September and October, it is eaten either fresh or dried. Its name derives precisely from its area of origin, where the loamy soils and lake climate favor the development of a hardy but slow-producing plant. Fasol del Lago is now being promoted through farmers’ markets and village fairs, and is one of the symbols of Veneto’s agricultural biodiversity. It is highly valued by consumers looking for local and minimally processed legumes.
