Moesin di Fregona is a mountain cheese made from whole cow’s milk, originating in the Treviso Pre-Alps, particularly in the town of Fregona. It is produced in high-altitude mountain dairies during the summer season, still following artisanal methods involving raw milk processing and aging on wooden boards. It has a natural rind, a straw-yellow paste, slightly eyed, and a compact consistency that becomes more crumbly with time. The flavor is strong, with herbaceous and cooked milk scents, which intensify with aging. It is ideal as a cutting board cheese, but also for mountain cooking, where it melts into hot dishes such as soups or gnocchi.
