Description

Fior di Maserà white radicchio is a prized variety of radicchio grown in the Veneto plain, recognizable by its large, crisp, creamy white leaves with greenish hues. Unlike the better-known red radicchios, it has a more delicate, slightly bitter taste, with a hint of sweetness that emerges especially after blanching, a process in which the plants are deprived of light to achieve a more tender texture. Cultivation takes place from September to February and involves traditional techniques passed down through generations. This radicchio is much appreciated raw in salads, but also baked, grilled or included in risottos and pies. It is the star of many local festivals and the subject of interest by chefs and gastronomes for its versatility and elegance on the plate. White radicchio represents a fine horticultural excellence of the Veneto region, still not widely grown but being rediscovered.
